Beef Samosa

Ingredients

For the pastry
  • 1 cup Organic Larder plain flour
  • 30 g Organic Larder ghee or butter
  • 2-3 tbsp water
  • ¼ tsp salt

Beef filling

  • 250 g Organic Larder minced beef
  • 1 tbsp Organic Larder olive oil
  • 1 medium tomato, skinned & chopped
  • 1 small onion, minced
  • 1 clove garlic, crushed
  • 1 green chili, minced
  • ½ tsp chili powder
  • 1 tbsp coriander, chopped
  • Salt & pepper to taste

Method

  • 1. Sift the flour & salt into a mixing bowl. Rub in the ghee or butter until the mixture forms breadcrumbs.
  • 2. Add the water and knead thoroughly to create a smooth dough. Cover & chill while preparing the filling
  • 3. Heat the oil in a pan, add the onions & garlic and fry until golden.
  • 4. Add the chili & chili powder and fry for 3 minutes.
  • 5. Stir in the meat and cook until well browned.
  • 6. Add the tomato, coriander, & salt to taste and simmer gently for 20 minutes, until the meat is tender and the mixture is dry, skimming off any fat. Stir well & cool slightly.
  • 7. Divide the pastry into 8 pieces. Dust with flour and roll each piece into a thin round, and cut each round in half.
  • 8. Fold each half into a cone and brush the seam with water to seal.
  • 9. Fill the cone with a spoonful of filling (do not overfill), dampen the top edge and seal firmly.
  • 10. Brush the beef samosa with a little oil and bake for 45 minutes, or until golden.
